Unused Content
In Rhythm Tengoku (Arcade), there are unused sprites of what appears to be a wall facing to the left with a mouse hole, suggesting the Rats would've gone though it at the end of the game instead of reaching a plate of cheese. This may also suggest the game originally didn't take place on a table.
Miscellaneous
All versions of Kossori Rat use the same graphics, but version 00, which is used in the Practice, starts with the rats running in from the left side of the screen before it starts scrolling. All other versions, with version 01 being used everywhere else, start with the screen already scrolling and the rats are already in the middle.

Unused Content
There are unused sprites and animations recreating the speech bubble with a dotted outline and the special あなた (You?) sprites from Rhythm Tengoku. These are replaced with universally used assets in Rhythm Heaven Megamix. Rat Race itself also has unused sprites for a bigger hit spark, though this is removed in Donut Remix, along with the sprite for the あなた (You?).
There is an unused animation of a rat jumping up in celebration, using some of the sprites used at the end of the game. Its name, "rat_good", suggests it may have been intended to be used upon a successful start to a run. Another unused animation, "rat_amaze", depicts a rat getting deformed before returning back to normal as it runs. Donut Remix contains all of these unused animations, as well as "rat_banzai" which is used at the end of Rat Race when the rats reach the cheese, complete with the blue bow.
There is an unused subroutine that has the stoplight flash to prepare the rats to start running, and is thrown away as soon as they do. While the stoplight is discarded in the middle of Rat Race and its appearance in Final Remix, this is done in the middle of a run, not at the start of one.
