Early Builds
The internal filename for this game's graphics suggest it was originally based on baseball rather than golf. A possible reference to this can be found in Police Call where inputting the code word "GOLFHERO" leads to what sounds like The Wandering Samurai hitting golfballs thrown by Mandrill with what sounds like a baseball bat.
Golfer is left-handed because the developers thought it would be easier to follow the golf ball when it's served from left to right[1].
Unused Content
During the Practice section, Golfer, Monkey and Mandrill have various exclusive animations. In other versions, these animations remain unused, and many of them are updated to match the new designs.
In Hole in One, there is an unused assembled version of the background, which also shows a plane flying in the background. While this asset doesn't get used, its animations would get repurposed for the Rhythm Heaven buildings in Hole in One 2.
In Remix 1, there is an unused bowtie sprite similar to what Monkey is wearing, but slightly larger. It is possible this was meant to be worn by Mandrill. There is also a hibiscus he may have been intended to wear as well, similar to Julia in the same remix.
Hole in One 2 and Remix 9 also have an unused bow sprite with a different art style. It is possible these were meant to be worn by Mandrill.
Regional Differences
Usually, the prologue used between Rhythm Heaven Fever and the English version of Beat the Beat: Rhythm Paradise, aside from remixes, is identical. For some reason, the English version of Beat the Beat: Rhythm Paradise has the one for Hole in One changed where the shadow under the logo is more saturated in color.
Rhythm Heaven Megamix
Hole in One consists of the following versions in Rhythm Heaven Megamix:

Unused Content
While the Practice section was streamlined in this game, the original functions and animations still remain. The zoomed in view on Monkey does not have the black border around him, however.
In Hole in One 2, the building for Rhythm Heaven in the background was replaced with some worm-like creatures. The flags that were used on the building still remain, unused.
In Lush Remix, the geysers that would appear towards the end of Hole in One exist unused, colored entirely black for some reason.
